Spanakopita

 

1 lb Frozen Spinach
2 cloves Garlic, chopped
½ - 1 lb Feta Cheese
Pepper to Taste
Puffed Pastry or Phyllo Dough

 
 
1.    Defrost & drain spinach well
2.    Brown garlic in a frying pan
3.    Add spinach & sauté until spinach it heated through
4.    Remove from heat, put into a bowl and cool a little
5.    Stir in crumbled feta cheese
6.    Unfold Puff Pastry & cut into 3 strips and cut each strip into 3’s
7.    Place a teaspoon of the spinach mixture onto ½ of each square
8.    Fold puff pastry over to make a triangle and seal edges
9.    Bake on a cookie sheet @ 375 for 10 minutes or until browned
10. Serve with Tzatziki Yogurt Sauce
