Penne alla Vodka

Penne alla Vodka

1 onion, diced
8 - 10 cloves of garlic, diced
1lb sweet Italian Sausage, casing removed
1 – 6oz can of Tomato Paste
1 – 28oz can of Crushed Tomatoes
Salt & Pepper to taste
Basil & Parsley, about a palm full of each
Sugar, a sprinkling
½ cup of vodka
1 cup Heavy Cream
1lb Penne, cooked 1 minute shy of Al Dente 
 

 

  1. Sauté the onions in a tablespoon of oil until soft
  2. Add in the garlic and cook about 1 – 2 minutes
  3. Add in the sausage and brown, breaking it up as it browns
  4. Add in the tomato paste and mix until combined
  5. Add in enough water (from the can) until the sauce appears thick
  6. Add in the crushed tomatoes and bring to a simmer
  7. Add in all of the seasoning and mix
  8. Let simmer on low for about 10 minutes
  9. Stir in the vodka and simmer for 10 minutes
  10. Stir in the heavy cream and simmer for 10 minutes
  11. Add the penne to the pot of sauce and cook for 2 minutes.
