Marinara Sauce

1 onion, diced
8 - 10 cloves of garlic, diced
1 – 6oz can of Tomato Paste
1 – 28oz can of Crushed Tomatoes
Salt & Pepper to taste
Basil & Parsley, about a palm full of each
Sugar, a sprinkling
Parmesan Cheese Rind (optional)
1lb Penne, cooked 1 minute shy of Al Dente

  1. Sauté the onions in a tablespoon of oil until soft 
  2. Add in the garlic and cook about 1 – 2 minutes 
  3. Add in the tomato paste and mix until combined 
  4. Add in enough water (from the can) until the sauce appears thick 
  5. Add in the crushed tomatoes and bring to a simmer 
  6. Add in all of the seasoning and mix 
  7. Let simmer on low for about 10 minutes 
  8. Add the penne to the pot of sauce and cook for 2 minutes.
