Coconut Custard Pie

9in Pie Shell
4 – Eggs
¾ cup Sugar
¼ tsp. Salt
¼ tsp. Nutmeg
1 tsp. Vanilla
2½ cup Milk
1 cup Shredded Coconut

 
 
1)   Preheat oven to 400°
2)  
Heat the milk – do not boil
3)  
Beat the eggs with the sugar, salt, nutmeg & vanilla
4)  
Slowly pour the milk into the egg mixture, whisking constantly
5)  
Stir in the coconut
6)  
Pour into the pie shell
7)  
Bake for 30 minutes
